I replied at 08:51 and answered yes to your question was the problem using a Jabsco joker valve rather than a Raritan. You edited your post at 08:52 and removed the question. The Yes answer stands - Get a Raritan joker valve.

Practical sailor magazine lead me to believe all these are equal.

Other potential clues:
* It only seems to siphon only when set to overboard, and not when set to holding tank.
* The holding tank unexpectedly filled up, perhaps siphoned water into the boat somehow?

You have "pumping" action when the boat is set to overboard as the wave action causes differential pressure. The joker valve is shot - replace it.
