Hot water is way to hot does has anyone put an anti scald valve? Does the thermostat in the electric water heater control the water temp when your not using the water heater? The hot water we get is super hot.

There is an adjustment via a thermostat on the front side of the water heater. See pages 12 & 13 in the Quick Nautic Hot Water Heater Boiler BX16 Rev05A - Manual - 1/1/2010 posted on the J/109 website.

So that thermostat setting will control water temp even when I'm not plugged into shore power?
Maybe I need to reset it or replace it.

Sorry - misunderstood the original question. No - that only controls the electric element. You'll need to install a mixing valve on the supply side of the engine HW feed to regulate the supply temperature if you want to control the temperature using hot water from the engine.
